Baking & Pâtisserie

Pastry Chef Emily joins us for mastering the art and techniques one recipe at a time. Each class focuses on a specific skill, so you’ll not only follow a recipe but truly understand why it works. We’ll explore essential baking fundamentals including creaming, sugar cookery, temperature control, emulsification, the muffin method, yeast handling, flour differences, working with fats and eggs, accurate weighing, savory pastry work, and even the vocabulary of a professional kitchen.

Creaming Method - Chocolate Chip Cookies

For our Creaming Method class, we’ve developed what we believe is the perfect chocolate chip cookie. A recipe that’s different from the rest, built on time-honored techniques and quality ingredients. You may have baked cookies a hundred times before, but this class will show you the small, professional touches that transform a familiar favorite into something unforgettable.

Cutting Fat in - Classic Apple, Chocolate Mousse and Sweet Potato Pies

People make pies sound incredibly complicated, despite the saying 'easy as pie'. Most pie crusts use a method called Cutting in fats, which creates the flaky, crumbly texture of a pie crust everyone loves. We teach different techniques for all varieties, and how to properly prepare a pie crust so it doesn't fall apart. It may sound daunting, but once you know the process, it's indeed easy as pie. This class will walk you through certain terms and steps to make your pie-baking even easier.
